Beautiful Beetroot, Yoghurt
& Chocolate Muffins
These are low fat but so rich in flavour one is enough.
Perfect for satisfying any sweet craving.
The beetroot gives them a beautiful colour and texture.

Ingredients
·
¼ cup Planet Organic natural cocoa
·
1 tablespoon BeeMan
honey
·
1 & ½ cups Maleny
IGA self raising flour
·
½ cup Maleny IGA
almond meal
·
1 cup Maleny Dairies
natural yoghurt
·
¼ cup butter
·
¼ cup
dark agave
·
1 large beetroot, peeled and finely grated
·
8 drops liquid chocolate stevia
·
2 free range RawGanix eggs
·
Multix café collection muffin wraps
·
75g dark chocolate, finely chopped
Method
·
Line a muffin baking tray with multix cases.
·
Pre heat oven to 180`c.
·
In a bowl combine honey, agave, stevia drops and
butter.
·
Add in eggs.
·
Mix in yoghurt and then almond meal followed by
beetroot.
·
Sift in flour and cocoa.
·
Very gently combine.
·
Spoon into cases and top with chopped chocolate.
·
Bake for approximately 20 minutes or until
springs back from touch.
Notes
·
Enjoy one with afternoon tea.
·
Swap honey for stevia powder for much less
calories. You will find it in the sugar isle.
·
Swap chocolate for chopped prunes.
Toddler Tips
·
Make toddler friendly sizes using a miniature
muffin tray.

These look and sound yummy. A couple of questions, what in the world is beetroot and where would I find it in the grocery store. I'm guessing my little rural stores won't have it, but I do go to the city. That's ok, it looks like several of those ingredients need be put on the shopping list for the city.:)Also, how much is 75g of dark chocolate, 1/4 cup, more, less? What are the muffin cases, and where do I find them? How much honey do I use to substitute for the Stevia? Can I use brown sugar instead? Am now following you.I don't cook often, but when I do, I like to try something different. Found you at UBC

ReplyDeleteBeetroot is a root vegetable, you may know it as groundbeet I think?

Definitely use honey or brown sugar in place of stevia, even just raw sugar as well.
Yeah about 1/4 dark chocolate, its for the top of the muffins so you can use as little or as much as you like :)

They are very rich to help people with sweet cravings only want one but you can play with the quantities to taste too :)
